Whether kale, Brussels sprouts, red cabbage or savoy cabbage: it’s high season forcabbage in all kinds. We introduce you to the most popular varieties and tell you why the vegetables are so healthy.

Especially in terms of nutrients cabbage is unbeatable: there is just as much vitamin C as in many citrus fruits. Vitamin A, B and K, as well as minerals such as calcium, magnesium and potassium, and the trace elements phosphor and iron are also contained in cabbage.

Cabbage is also rich in fiber, which ensures a long-lasting feeling of saturation and stimulates digestion. The glucosinolates (the typical bitter compounds), which are contained in cabbage, have an antimicrobial effect and can help with various diseases. A perfect healthy winter vegetable!

White cabbage

The most pupular kind of cabbage in Germany is perfect for a salad or as an ingredient for hot dishes. It is often served as sauerkraut. White cabbage offers a high amount of vitamin C content and is rich in anti-inflammatory antioxidants. It can be stored particularly well (up to three months).

Kale

Kale is a real superfood that can be used for various delicious recipes. It is important that it is harvested after the first frost. Kale only develops its slightly sweet taste when it has been exposed to the cold for a long time. Some time in the freezer has a similar effect. Kale is rich in magnesium and vitamin C.

Cauliflower

Cauliflower contains a little less vitamin C than other varieties of the cabbage, but is particularly easy to digest; even for infants when served as baby food. It has a diuretic effect, can be eaten raw in a salad as well as cooked or baken in the oven as a whole.

Brussels sprouts

Brussels sprouts contain lots of iron, magnesium and kalium. Our tip: just steam it for a short time in ordert o avoid losing too many of the nutrients in the boiling water! Brussels sprots also love frost that helps to develop its characterictic taste.
