Halibut fillets—snow-white flesh, with a lobster-like taste and texture—are, in a word, elegant, and a fish this luxurious deserves to be served with a special salad. The DOLE Spinach Cherry Almond Bleu Salad Kit already has a deluxe air about it, but for this dish we gild the lily, so to speak, with the addition of crisp slivers of Granny Smith apple and ruby-red pomegranate seeds. This meal for two can be ready in under a half hour and is the perfect way to impress someone special or just add a bit of luxury to an otherwise ordinary weeknight meal.

Ingredients

  • 1 pkg. DOLE Spinach Cherry Almond Bleu Kit
  • 8 oz. halibut fillet, cut in half
  • Olive oil to brush
  • 1 small DOLE Granny Smith Apple, thinly sliced
  • 1/3 cup pomegranate seeds (optional)

Directions

  1. Reserve 1 teaspoon White Balsamic Vinaigrette dressing from kit.
  2. Brush halibut with olive oil and season with salt and pepper to taste.
  3. Spoon reserved 1 teaspoon dressing over halibut.
  4. Place in small shallow baking dish sprayed with nonstick cooking spray.
  5. Bake at 375°F., 14 to 17 minutes or until desired doneness.
  6. Combine all ingredients in salad kit except White Balsamic Vinaigrette in large bowl.
  7. Add apple and pomegranate seeds.
  8. Toss with dressing.
  9. Divide salad mixture on 2 large plates. Arrange cooked halibut on each.
