This enlightened take on the traditional bagel breakfast pairs smoked salmon with crunchy romaine, three cheeses, roasted garlic croutons, pickled capers and sweet, cherry tomatoes drizzled with a creamy Caesar dressing. Smoky and savory, you’ll never miss the bread.

Ingredients

  • 1 package DOLE® Ultimate Caesar Kit
  • 1/2 cup cherry tomatoes, cut in half
  • 4 slices low-fat Swiss cheese, cut into 1-inch squares
  • 2 teaspoons drained capers
  • 4 oz. thinly sliced smoked salmon

Directions

  1. Combine all DOLE Ultimate Caesar Kit ingredients, adding the tomatoes, Swiss cheese and capers, and toss well.
  2. Transfer salad to 4 shallow bowls; top with smoked salmon. Serve toasted bagels on the side, if desired.

Tip: Fresh chopped basil works well in place of the capers in this recipe. Also, feel free to cut the amount of salmon down to 3 oz. if you prefer a smaller amount.
