Ingredients

  • 1/2 DOLE® Onion, chopped 
  • 1/2 stalk DOLE Celery, chopped 
  • 1/2 DOLE Carrot, chopped 
  • 1/2 clove garlic, crushed 
  • 1 DOLE Plantain, peeled and diced 
  • 1/2 chili pepper, deseeded and chopped 
  • 1-1/2 tablespoon sesame oil 
  • 1/2 cup orange juice 
  • 1 cup low sodium vegetable broth 
  • 1/2 cup lite coconut milk 
  • Saffron powder 
  • Cayenne pepper 
  • Salt 
  • Onion shoots (to garnish)

Directions

  1. In a saute pan, heat sesame oil over medium heat. Add chopped onion, celery, carrot, garlic and chili pepper and sweat in the sesame oil. Add diced plantain. Add the broth, coconut milk and orange juice. Simmer over low heat for 20 to 25 minutes.
  2. Puree soup with a handheld blender and season to taste with salt, saffron and cayenne pepper. Garnish with onion shoots, if desired.
