The bright flavor of smooth goat cheese balances perfectly with the sweetness of beets and nutritious DOLE® Organic Super Spinach in this colorful pep-you-up salad. Perfect for lunch or as a side dish for dinner.

Ingredients

  • 1 pkg. (5 oz.) DOLE® Organic Super Spinach
  • 1 can (15 oz.) beets or 4 to 6 small cooked beets, drained and sliced
  • 1 fennel bulb, trimmed and very thinly sliced, then cut into matchsticks
  • 2 oranges, segmented or 1-1/2 cups DOLE Mandarin Oranges, drained
  • 1 apple, cored and thinly sliced
  • 1 cup chopped walnuts, toasted
  • 2 to 4 oz. goat cheese, optional
  • Apple Cider Vinaigrette (recipe below)

Directions

  1. Combine salad blend, beets, fennel, oranges, apple and walnuts in a large bowl; season with ground black pepper. Top with goat cheese, if desired. Toss with Apple Cider Vinaigrette, to taste.

Apple-Cider-Vinaigrette: Whisk together 2 tablespoons apple cider vinegar, 1-1/2 tablespoons olive oil, 1 tablespoon maple syrup, 2 teaspoons Dijon mustard, season with salt and ground black pepper to taste, until blended. Makes about 1/3 cup.
