Ingredients

  • 2 cups DOLE® Tropical Gold® Pineapple, cut into chunks 
  • 1/2 cup DOLE Seedless or Golden Raisins 
  • 1/2 cup sliced DOLE Green Onions 
  • 2 teaspoons finely chopped fresh ginger 
  • 1/2 teaspoon ground ginger 
  • 1 garlic clove, finely chopped 
  • 3 cups cooked brown rice 
  • 2 cups chopped cooked chicken breast or turkey breast 
  • 2 tablespoons low-sodium or regular soy sauce

Directions

  1. Heat 2 tablespoons water over medium heat in large, nonstick skillet. Add raisins, green onions, ginger and garlic; cook and stir 3 minutes.
  2. Stir in pineapple chunks, rice, chicken, soy sauce and remaining 2 tablespoons water. Cover; reduce heat to low and cook 5 minutes or until heated through.
