Better than a bowl, iceberg lettuce leaves are a divine way to hold this salad of sweet and tender spinach, dried cherries, almonds and bleu cheese crumbles. With delicious cooked shrimp, these wraps make a lovely hand held meal.

Ingredients

  • 6 DOLE® Lettuce “cups”, large iceberg leaves
  • 1 pkg. DOLE Spinach Cherry Almond Bleu Kit
  • 24 large cooked shrimp, cleaned and deveined
  • 1 tablespoon olive oil
  • 2 teaspoons chopped dill
  • 2 teaspoons grated lemon peel
  • Salt, to taste

Directions

  1. Arrange lettuce cups on a platter or on six medium plates.
  2. Toss spinach greens with the White Balsamic Vinaigrette dressing from the salad kit and divide it among the lettuce cups.
  3. Toss shrimp with olive oil, dill, lemon peel and salt. Divide the shrimp among the salads and sprinkle with dried cherries, sliced roasted almonds and bleu cheese crumbles from the salad kit just before serving.
