Just one bite of this salad and we’re transported to a terrace overlooking the sunny, breezy beaches of the Italian Riviera. In true Mediterranean fashion, just a few ingredients go a long way. With a just-cooked blend of shrimp, scallops, mussels and calamari atop crunchy romaine, fresh basil, lemon and chili flakes, this summery lunch or light dinner works year-round, served indoors or out.

Ingredients

  • 1 tablespoon olive oil
  • 1 bag (12-16 oz.) frozen seafood mix (shrimp, scallops, clams, mussels, squid etc), thawed
  • 1 garlic clove, minced
  • Salt and freshly ground pepper to taste
  • 1 package DOLE® Ultimate Caesar Kit
  • 1/4 cup coarsely chopped fresh basil
  • 1/2 teaspoon red chili flakes (optional)
  • 1 small lemon, cut into 4 wedges

Directions

  1. In a 10-inch skillet, heat olive oil over medium heat. Once oil is hot, add seafood mix and garlic. Season lightly with salt and pepper.
  2. Stir-fry 3 to 4 minutes, just until seafood is opaque. Transfer to bowl and cover with foil to keep warm.
  3. In a large bowl, combine all DOLE Ultimate Caesar Kit ingredients, add fresh basil and toss. Add cooked seafood mix and chili flakes, if desired; toss well. Serve in shallow bowls; garnish with lemon wedges.

Tip: Not a fan of seafood? Swap it for 12 to 16 ounces of cooked, boneless skinless chicken breast or thigh meat, cut into 1-inch pieces.
