Not your traditional taco

Ingredients

  • 2 tablespoons sugar
  • 1 teaspoon ground cinnamon
  • 4 6-inch flour tortilla (6-inch)
  • 2 tablespoons water
  • 1 pkg (4 serving size) instant sugar free vanilla/chocolate pudding mix
  • 1 teaspoon grated lemon peel
  • 1 teaspoon vanilla extract
  • 1 whole DOLE® Banana, peeled and sliced
  • 1 whole DOLE Mango, peeled, sliced
  • 1 whole DOLE Kiwi fruit, peeled and sliced
  • 1/2 cup DOLE Strawberries or Raspberries

Directions

  1. Combine sugar and cinnamon. Brush tortillas lightly with water. Sprinkle sugar mixture over both sides of tortillas.
  2. Spray large custard cups with nonstick cooking spray. Gently press tortillas into cups. Bake at 400 F., 10 minutes or until lightly browned. Cool.

  3. Prepare pudding according to package directions. Stir lemon peel and vanilla into pudding.
  4. Combine banana, mango, kiwi and strawberries, in small bowl.
  5. Arrange tortilla shells on dessert plates. Spoon about 1/2 cup pudding into each shell. Spoon fruit over pudding in shells.
