Okay, so we’re not in Southeast Asia—one can still pretend, right? Doing so is easy with these super fresh spring rolls packed with crunchy salad, lean chicken and a light and bright dipping sauce. A squeeze of lemon, and it’s summer somewhere.

Ingredients

  • 1 package DOLE® Endless Summer Kit, dressing divided
  • 12 oz. shredded or chopped cooked chicken
  • 4 spring roll rice paper wrappers
  • 1 lemon, cut into 4 wedges

Directions

  1. Remove crouton pouch from DOLE Endless Summer Kit; crush slightly.
  2. In a large bowl, toss chicken and crushed croutons with all remaining Endless Summer Kit ingredients, except for dressing.
  3. Add 1/4 of the dressing packet to salad; toss well. Place remaining dressing in a small bowl; reserve for dipping.
  4. Wrapping mixture into Spring Rolls: Follow the wrapper instructions for moistening and rolling. Place 1/4 cup of the salad mixture in the bottom quarter of each rice paper wrapper. Fold up the bottom of wrapper over the filling and press down slightly. Fold over left and right sides and roll up spring roll completely. Slice each spring roll in half; transfer to a large plate. Serve with lemon wedges and reserved dressing.

Tip: If rice paper wrappers are hard to find, use 4 soft tortillas in the 8-inch size. For a savory kick, add 2 tablespoons of peanut sauce to the dressing reserved for dipping.
