Ingredients

  • 2 cups oyster mushrooms, sliced
  • 1 tablespoon olive oil
  • 1 pkg. (8 oz.) DOLE® Baby Spinach
  • 1/2 cup vegan mayonnaise
  • 1/2 cup chopped fresh DOLE® Tropical Gold® Pineapple
  • 2 teaspoons Dijon mustard
  • 2 tablespoons chopped DOLE® Green Onions
  • 2 garlic cloves, minced

Directions

  1. Preheat oven to 400°F. Spread mushrooms into small (4 cup) baking dish.
  2. Heat oil in large nonstick skillet over a medium-high heat. Stir in spinach, cooking 1 to 2 minutes or until wilted. Spoon spinach over mushrooms.
  3. Stir together vegan mayonnaise, pineapple chunks, mustard, green onions, and garlic in small bowl. Spread sauce over spinach until well covered.
  4. Bake 15 minutes or until sauce begins to brown. Set oven to broil. Place baking dish under broiler and broil 2 to 3 minutes or until golden brown and bubbly.
