Ingredients

  • 1 English cucumber
  • 1 pkg. (5 oz.) DOLE® Organic Spring Mix
  • 3 tablespoons balsamic vinegar
  • 2 tablespoons olive oil
  • 2 tablespoons chopped fresh mint
  • Pinch salt
  • 15 olives
  • Olive tapenade drizzle, optional (recipe below)
  • 2 teaspoons grated orange peel

Directions

  1. Slice cucumbers lengthwise into long, thin strips using a hand-held mandoline or vegetable peeler. Set aside.
  2. Toss together salad blend, vinegar, oil and mint. Set aside.
  3. Overlap two cucumber strips side by side on your work surface. Place one cup salad mixture in the center of the cucumber ribbons. Wrap the cucumber ribbons around the greens into a package. Place them, seam-side down on a platter. Continue wrapping remaining greens the same way.
  4. Top salad packages with olives and grated orange peel. Spoon olive tapenade drizzle around and over the greens.
  5. Olive-Tapenade-Drizzle: Whisk together 2 tablespoons olive tapenade and 2 tablespoons olive oil.
  6. Tip: If you want to prepare these salad bundles ahead of time, simply roll them in the cucumber ribbons and refrigerate. Just before serving, drizzle them with the olive tapenade drizzle and some balsamic dressing.
