The green valleys of California have long been known for fresh produce and fruits, such as peaches, but only in recent years have they become a home to vast blueberry farms. Our California Summer Salad celebrates the culinary cornucopia that is the Golden State: fresh, tender greens tossed with sweet sliced peach and plump blueberries, plus crumbled feta, toasted pine nuts and sliced DOLE® Green Onion for some savory notes. Our white balsamic dressing is just what you’d expect to be served on a salad at one of the many fine restaurants that have popped up along with vineyard tasting rooms throughout the state. Ingredients

  • 1 pkg. (5 oz.) DOLE® Spring Mix
  • 1 peach, sliced
  • 2/3 cup chopped cucumber
  • 1/2 cup blueberries
  • 1/2 cup crumbled feta cheese
  • 1/3 cup pine nuts, toasted
  • 1/4 cup sliced DOLE Green Onions
  • White Balsamic Vinaigrette (recipe below)

Directions

  1. Combine salad, peach, cucumber, blueberries, feta cheese, pine nuts and green onions in large bowl.
  2. Toss with White Balsamic Vinaigrette, to taste.
  3. Refrigerate any remaining dressing.
