Ingredients

  • 1-3/4 pounds boneless, skinless chicken breasts and thighs, quartered 
  • Salt and ground black pepper to taste 
  • 1-1/2 to 3 tablespoons curry powder, divided 
  • 2 tablespoons olive oil 
  • 2-1/2 cups diced DOLE® White Onion 
  • 1 tablespoon finely chopped garlic 
  • 1 teaspoon ground cumin 
  • Pinch of cayenne pepper 
  • 2 cups diced fresh tomatoes 
  • 1 cup low sodium chicken broth 
  • 1/3 cup lite coconut milk 
  • 3 firm green DOLE Bananas, peeled and cut into ½-inch slices 
  • 3 cups DOLE Cauliflower florets 
  • 4 cups DOLE Spinach 
  • 2 tablespoons chopped fresh cilantro, for garnish 
  • 2 DOLE Green Onions, thinly sliced for garnish 
  • 6 to 8 lime wedges, for garnish

Directions

  1. Season chicken with 1 tablespoon curry powder, salt and pepper. Heat olive oil over medium heat in large saucepan. Sear chicken on all sides. Remove from pan to a plate, set aside.
  2. Stir 1/3 cup chicken broth into saucepan and loosening stubborn spices from bottom of the pan. Add onion and garlic, cook 5 minutes or until broth evaporates. Stir in remaining curry powder, cumin and cayenne.
  3. Return chicken to saucepan and add tomatoes, remaining chicken broth, coconut milk, banana slices and cauliflower. Bring the mixture to a boil, reduce to a simmer and cook for 25 to 30 minutes.
  4. Remove saucepan from heat and fold in the spinach, stirring until wilted. Serve over Banana and Brown Rice Pilaf or other cooked grains. Garnish with cilantro, green onions and a squeeze of lime, if desired.

Tip: If using ripe bananas, slightly increase the amount of cayenne to balance the sweetness with heat.
