Ingredients

  • 1 pound salmon fillets
  • salt and ground black pepper to taste
  • 1/2 cup low-fat plain Greek yogurt
  • 1 teaspoon chipotle adobe sauce
  • 1 teaspoon lime juice
  • 2 cups thinly sliced DOLEĀ® Brussels Sprouts
  • 6 (6-inch) whole-wheat tortillas
  • 3 cups DOLE Butter Bliss
  • 2 tablespoons chopped fresh cilantro
  • Spicy Citrus Salsa (recipe below)

Directions

  1. Preheat oven to 400°F. Season salmon with salt and pepper.
  2. Roast salmon 6 minutes on each side or until fish flakes with fork, set aside.
  3. Wrap tortillas in foil; warm in oven. Meanwhile, stir together yogurt, chipotle adobe sauce and lime juice, set aside.
  4. Place Brussels sprouts and salad blend in center of each tortilla. Spoon yogurt-chipotle sauce over salad. Top with flaked salmon, cilantro and Spicy Citrus Salsa.

Spicy Citrus Salsa: Combine 1 cup diced fresh DOLE Tropical Gold® Pineapple, 1/2 cup DOLE Mandarin Oranges, drained, 1 teaspoon minced hot chile and 1 teaspoon grated lime peel, in small bowl.
