CHIA-BREADED CHICKEN BREAST

INGREDIENTS

  • 3/4 cup Italian-seasoned bread crumbs
  • 1/2 cup DOLE® Nutrition Plus Milled Chia Seeds
  • 1/4 cup shredded Parmesan cheese
  • 1 tablespoon dried parsley flakes
  • 1/2 teaspoon salt
  • 4 boneless skinless chicken breasts
  • 1 pkg. (10 oz.) DOLE® Italian Blend Salad
  • Bottled Caesar salad dressing, as needed

DIRECTIONS

COMBINE bread crumbs, chia seeds, Parmesan cheese, parsley flakes and salt in large bowl. Rinse chicken breasts under water; dry slightly, leaving some moisture for breading to adhere.

DREDGE the chicken breasts in the breading mixture; arrange on a foil-lined sheet pan. Bake at 375°F 25 minutes or until chicken is no longer pink in center (165°F).

SERVE sliced chicken breasts over DOLE® Italian Blend Salad and top with prepared Caesar dressing.
