One of the unique qualities of mushrooms is that they are like flavor sponges, taking on the essence of other ingredients they are cooked with. Shiitake already have a pleasant, almost meaty flavor and in this recipe, when they are sautéed in the same pan that shallots have just been caramelized in, they become even more delicious. These two ingredients, along with sweet raisins and a zesty Orange Horseradish dressing, are the basis for our Very Veggie Savory Salad. The addition of quinoa (look for it with rice and other grains at your market), a nutty-flavored, protein-rich grain, makes this salad as satisfying as it is tasty.

Ingredients

  • 1 shallot, thinly sliced 
  • 4 teaspoons olive oil, divided 
  • 2-1/2 ounces fresh DOLE® Shiitake Mushrooms, stems removed and cut in half 
  • 1 cup cooked quinoa 
  • 2 tablespoons DOLE Seedless Raisins 
  • Orange Horseradish Dressing (recipe below) 
  • 1 pkg. (12 oz.) DOLE Very Veggie Salad

Directions

  1. Saute shallot in 2 teaspoons olive oil in small nonstick skillet over medium-high heat, 4 to 5 minutes or until golden brown. Remove shallot; drain on paper towels. In same skillet, sauté mushrooms in remaining 2 teaspoons olive oil 5 to 6 minutes or until softened.
  2. Combine cooked quinoa, shallot, mushrooms and raisins in small bowl. Stir in 2 tablespoons Orange Horseradish Dressing.
  3. Toss salad blend with remaining Orange Horseradish Dressing, to taste in large bowl. Refrigerate any leftover dressing. Divide salad on 2 large plates. Spoon quinoa mixture over each.

Orange-Horseradish Dressing: Whisk 1/4 cup olive oil, 1/2 cup fresh orange juice and 1 teaspoon prepared horseradish in small bowl until blended. Makes about 1/2 cup.
