Ingredients

  • 1-1/2 cups sliced DOLE® Cauliflower, 1/4-inch thick 
  • 8 slices DOLE Sweet Potatoes, 1/4-inch thick 
  • 2 slices fresh DOLE Tropical Gold® Pineapple, 1/4-inch thick 
  • Olive Oil Spray 
  • 1 teaspoon smoked paprika 
  • Salt to taste 
  • 4 small whole wheat rolls 
  • 1 recipe Banana-Avocado Cream Spread (recipe below) 
  • 2 cups DOLE Baby Spinach

Directions

  1. Preheat oven to 400°F. Arrange cauliflower, sweet potato and pineapple on baking pan. Spritz with olive oil spray and season with smoked paprika and salt. Roast for 20 minutes, until vegetables and fruit soften and lightly brown. Remove and set aside.
  2. Slice rolls in half and spread the top and bottom with the Banana-Avocado Cream Spread. Layer the cauliflower, sweet potato and pineapple slices on the roll and top with baby spinach.

Banana-Avocado Cream Spread: In a food processor, combine 1/2 teaspoon chopped garlic clove, 1 trimmed DOLE Green Onion, 1/4 cup cilantro leaves, and 1/2 teaspoon chopped jalapeno pepper. Process until a rough chop. Add 1/2 DOLE Banana, 1 avocado, 1/2 tablespoon lime juice, a pinch smoked paprika and salt to taste, process until smooth.
