Ingredients

  • 1 tablespoon red wine vinegar 
  • 2 tablespoons honey (optional) 
  • Grated peel 1 lime 
  • 2 tablespoons fresh lime juice 
  • 1 garlic clove, finely chopped 
  • 2 tablespoons finely chopped fresh parsley 
  • 2 tablespoons finely chopped fresh mint 1/8 teaspoon crushed red pepper 
  • 3/4 pound sushi-grade Ahi tuna, cubed 
  • 2 cups fresh DOLE® Tropical Gold® Pineapple, cut into chunks 
  • 2 cups watermelon, cut into chunks 
  • 1 cup DOLE Apricots, cut into chunks 
  • 1/4 cup finely chopped DOLE Red Onion 
  • 1 tablespoon DOLE Green Onion, chopped 
  • 1 tablespoon pine nuts

Directions

  1. Combine vinegar, honey, lime peel, lime juice, garlic, parsley, mint and red pepper in medium bowl. Add tuna and toss to evenly coat. Set aside.
  2. Stir together pineapple, watermelon, apricots, and red onion, in large bowl. Spoon over tuna. Sprinkle with green onion and nuts.
