Ingredients

  • 4 medium DOLE® Sweet Potatoes, washed and cut into 1/4-inch slices (about 4 cups) 
  • 2 cups DOLE Tropical Gold® Pineapple, sliced 
  • 1/2 cups dried cranberries 
  • 1/4 cup packed brown sugar 
  • 3 tablespoons butter substitute, melted 
  • 1/2 teaspoon ground cinnamon

Directions

  1. Preheat oven to 400ºF.  Spray 12×8-inch baking dish with nonstick cooking spray.
  2. Arrange sweet potatoes, pineapple, and cranberries in baking dish.  Sprinkle with brown sugar.  Combine butter and cinnamon in small bowl; drizzle over brown sugar.  Cover with aluminum foil.
  3. Bake 45 to 50 minutes or until potatoes are tender.  Remove aluminum foil last 5 to 10 minutes of baking time.
