Ingredients

  • 1 tablespoon olive oil 
  • 1 DOLE® Red Onion, peeled and diced 
  • 2 teaspoons minced garlic 
  • 2 tablespoons chili powder 
  • 1 tablespoon ground cumin 
  • 1-1/2 pounds lean ground turkey 
  • 1 cup grated DOLE Cauliflower 
  • 1 can (28 oz.) diced tomatoes in sauce 
  • 1 cup low-sodium chicken broth 
  • 4 cups DOLE Baby Spinach 
Garnish: chopped fresh DOLE Tropical Gold® Pineapple, diced avocado, and sliced DOLE Green Onions

Directions

  1. Heat olive oil in large saucepan. Sauté onions, garlic, chili powder and cumin until vegetables are tender, about 3 minutes. Add turkey and cauliflower cook 5 minutes. Add tomatoes and broth, simmer for 25 minutes.
  2. Fold baby spinach into the chili just before serving. Top chili with pineapple, avocado, and green onions.

Tip: Grate cauliflower with hand grater or in food processor fitted with grating plate.
