An homage to the red beans and rice of Louisiana fame, this recipe kicks it up a notch with savory, Cajun-spiced shrimp and a veggie-packed DOLE® Chopped Sunflower Crunch Kit. Brown rice makes this a perfect meal to keep you full of energy.

Ingredients

  • 1 tablespoon olive oil 
  • 1/2 cup chopped DOLE® Onion 
  • 1/2 cup chopped red bell pepper 
  • 1/2 cup chopped DOLE Celery 
  • 2 garlic cloves, minced 
  • 1/2 pound shrimp, peeled and deveined 
  • 1 bay leaf 
  • 1 tablespoon Cajun seasoning 
  • 1 cup low-sodium chicken broth 
  • 1 pkg. DOLE Chopped Sunflower Crunch Kit 
  • 1 can (15 oz.) red kidney beans, rinsed and drained
  • Salt and ground black pepper, as needed 
  • Cooked brown rice 
  • Hot sauce

Directions

  1. Heat oil in large sauce pan over medium heat. Add onion, bell pepper, celery and garlic. Cook 5 minutes, stirring often, until vegetables are soft. Add shrimp, bay leaf and Cajun seasoning. Cook 2 minutes, stirring often. Add chicken broth, dressing packet and beans.
  2. Bring mixture to boil; reduce heat and cook about 8 minutes stirring occasionally. Stir in chopped salad blend; cook 2 minutes stirring well, or until wilted. Spoon over cooked brown rice. Garnish with sunflower seeds and bacon packets and serve with hot sauce.
