Ingredients

  • 3 tablespoons chopped fresh cilantro 
  • 1/3 cup finely chopped DOLE® Red Onion 
  • 2 teaspoons finely chopped serrano or jalapeno chili 
  • 1 garlic clove, finely chopped 
  • 2 tablespoons extra-virgin olive oil 
  • 1 tablespoon fresh lime juice 
  • 1 teaspoon less-sodium soy sauce 
  • 1 teaspoon Dijon mustard 
  • 1 pound peeled raw large shrimp 
  • 1 pkg. DOLE Chef’s Choice Caesar Salad Kit 
  • 4 (1-inch) slices fresh DOLE Tropical Gold® Pineapple

Directions

  1. Combine cilantro, onion, chili, garlic, olive oil, lime juice, soy sauce and mustard in large sealable bag. Add shrimp, seal and shake to coat. Marinate for 20 minutes.
  2. Preheat grill. Brush grill lightly with oil. Cut Romaine lettuce in half lengthwise; set aside.
  3. Remove shrimp from marinade and place on grill with pineapple slices. Cook 1 to 2 minutes then turn over and cook an additional 1 to 2 minutes or until shrimp is cooked and pineapple lightly browned. Place Romaine halves cut side down on grill when turning the shrimp and cook until lightly charred.
  4. Place charred Romaine on serving platter. Spoon half of one dressing packet over Romaine. Top with pineapple and shrimp, drizzle remaining dressing over salad. Save other dressing packet for another salad. Top with black pepper, Parmesan cheese and croutons from salad kit.
