These shrimp rolls paint a picture of summer by the beach with every bite. Shrimp is sautéed in Toasted Sesame Ginger Dressing for a unique taste experience and the greens add a classic crunch to these sandwiches.

Ingredients

  • 3 tablespoons reduced-fat mayonnaise with olive oil
  • 1 tablespoon lime juice
  • 1-1/2 teaspoons grated lime peel
  • 1/4 teaspoon salt
  • 1 pkg. DOLE® Chopped Sesame Asian Salad Kit
  • 1 tablespoon olive oil
  • 1 pound large shrimp, peeled and deveined
  • 8 small whole-grain finger rolls

Directions

  1. Whisk together mayonnaise, lime juice, lime peel and salt. Add salad greens; toss to combine until coated, set aside.
  2. Heat olive oil over medium heat and sauté shrimp for 6 minutes or until pink and opaque. Add Toasted Sesame Ginger Vinaigrette from the salad kit to the pan, stirring to coat shrimp.
  3. Slice top of the rolls, almost but not all the way through. Open rolls slightly and spoon some slaw on bottom of each roll. Top with shrimp and then additional slaw. Garnish with roasted sliced almonds and garlic wontons from the salad kit.
  4. Tip: Make the slaw and cook the shrimp ahead of time and assemble just before serving.
