Ingredients

  • 2 cups orzo pasta, cooked according to package directions
  • 1 large tomato, seeded, cut into 1/4-inch pieces
  • 1/2 cup crumbled feta cheese
  • 3 tablespoons sliced black olives
  • 2 tablespoons coarsely chopped fresh basil
  • 2 tablespoons lemon juice
  • 1 package (5 oz.) DOLE® Arugula
  • Salt and freshly ground pepper to taste

Directions

  1. In a large bowl, add and mix all the ingredients except for the DOLE Arugula. Season lightly with salt and pepper.
  2. Toss in the DOLE Arugula. Serve in medium bowls.

Tip: Feel free to swap the orzo for cooked brown rice or barley. If the end dish feels too dry, toss the salad with 2 tablespoons of EVOO for a little added moisture.
