Italians have eaten this classic bread salad for years as a way to use up extra, day-old bread. In fact, the drier the better to soak up ripe, cherry tomatoes and a light vinaigrette with balsamic vinegar and orange juice. Use multi-grain bread for some extra nutrition and fiber.

Ingredients

  • 1 cup cherry tomatoes, cut in half
  • 1 cup (4 oz.) part skim mozzarella cheese, shredded
  • 2 tablespoons fresh basil, coarsely chopped
  • 2 tablespoons balsamic vinegar
  • 2 tablespoons orange juice
  • 1 tablespoon lemon juice
  • 1 package (8 oz.) DOLE® Mediterranean Salad Blend, coarsely chopped
  • 2 cups multi-grain bread cut into 1-inch pieces
  • Salt and freshly ground pepper to taste

Directions

  1. In a large bowl, combine all of the ingredients except for DOLE Mediterranean and bread cubes. Season lightly with salt and pepper.
  2. Add DOLE Mediterranean and bread pieces. Toss well; transfer to 4 shallow bowls.

Chef-Tip: Adding a bit more basil—about 1/4 cup chopped or sliced into a chiffonade—boosts up the freshness of the dish. Or try 2 teaspoons of dried basil if you have that on hand. If you only have day-of, not day-old bread, toast the 1-inch cubes beforehand to prevent sogginess.
