Bananas and apple salad with a light citrus cinnamon vinaigrette.

Ingredients

  • 1 large DOLE® Banana, sliced 
  • 2 cups cooked whole wheat couscous or Moroccan couscous, cooled (about 1/2 cup dry) 
  • 1/2 cup chopped DOLE Red Apple 
  • 1/3 cup sliced DOLE Celery 
  • 1/4 cup chopped walnuts, toasted 
  • 1/2 cup plus 2 tablespoons orange juice 
  • 3 tablespoons olive oil 
  • 1 tablespoon lemon juice 
  • 1/2 teaspoon salt 
  • 1/8 teaspoon ground cinnamon

Directions

  1. Combine banana, couscous, apple, celery and nuts in large bowl. Set aside.
  2. Stir together orange juice, oil, lemon juice, salt and cinnamon in small bowl. Pour over salad; toss to evenly coat.
