Coleslaw (or “slaw,” depending on where you’re from) has long been a popular, crunchy-creamy side dish to summer picnic and BBQ fare here in the States. Though most love the original stateside version, other global versions—like Sweden’s oil and vinegar slaw, often paired with pizza, and Italy’s “insalata capricciosa,” made with ham and sliced peppers—prove the variations are endless--and delicious. We’ve created our own by adding a few stars—like savory Parmesan shreds, zingy lemon juice, and toasted cumin seed—to this classic recipe.

Ingredients

  • 1 package (14 oz.) DOLE® Classic Coleslaw
  • 2 large tomatoes, seeded and cut into 1/4-inch pieces
  • 1/4 cup chopped fresh parsley
  • 3 tablespoons shredded Parmesan cheese
  • 1 tablespoon lemon juice
  • 1 teaspoon whole cumin seed, toasted
  • Salt and fresh pepper to taste

Directions

  1. In a large bowl, toss all of the ingredients together. Season lightly with salt and pepper. Toss again; serve immediately.

Tip: If you want more moisture in your slaw, add 2 teaspoons of balsamic, apple cider or white vinegar and 1/4 cup olive oil. Not a fan of cumin? Two teaspoons of dried, chopped dill or dried basil work just as well. Likewise, fresh basil is an easy seasonal substitute for fresh parsley.
