Ingredients

  • 1 cup chicken breast, cooked and cubed 
  • 1/4 cup sliced DOLE® Green Onion 
  • 1/3 cup diced DOLE Celery Hearts 
  • 1/4 cup red bell pepper, diced 
  • 1/2 cup Low-fat Lemon Blueberry Dressing (recipe below)
  • 1 pkg. (12 oz.) DOLE Greener Selection

Directions

  1. Gently blend all ingredients together and serve over greens. Top with dressing.

Low-fat Lemon Blueberry Dressing:

Mix together 3/4 cup fresh or frozen blueberries, 1/4 cup low-fat lemon yogurt, 1 tablespoon reduced-calorie mayonnaise and 1 teaspoon salt until well blended.
