Ingredients

  • 2 large ripe Dole® Bananas, peeled and mashed
  • 1 cup pumpkin puree
  • 1 teaspoon pure vanilla extract
  • 2 cups old-fashioned rolled oats
  • ½ teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • ½ cup Dole® Golden Raisins
  • ½ cup chopped walnuts
  • 3 tablespoon pumpkin seeds, divided

Directions

  1. Preheat the oven to 350'F. Grease a 9-inch square baking pan with a little cooking spray.
  2. Take a large bowl and whisk the bananas and pumpkin puree until combined. Add the vanilla, oats, cinnamon and nutmeg, stir to combine, then add the raisins, walnuts and 2 tablespoons of the pumpkin seeds.
  3. Transfer the mixture to the prepared pan and sprinkle the remaining tablespoon of pumpkin seeds over the top.
  4. Bake for 30 minutes. The edges should be just starting to brown and the bars should be firm. Allow to cool on a rack. Cut into 9 bars and serve.
