Ingredients

  • 1 pkg. (5 oz.) DOLE® Spring Mix 
  • 1/2 cup fresh basil leaves, torn 
  • 1/4 teaspoon ground cinnamon
  • 2 slices fresh DOLE® Tropical Gold® Pineapple, cut 1-inch thick 
  • 2 DOLE Bananas, peeled, cut in half lengthwise 
  • 1/2 cup DOLE Strawberries, quartered 
  • 1/2 cup DOLE Blueberries 
  • 3 tablespoons sliced almonds, toasted 
  • Greek Yogurt Dressing (recipe below)

Directions

  1. Combine Spring Mix and basil leaves; arrange on serving platter.
  2. Spray pineapple and banana with cooking spray; sprinkle with cinnamon. Grill over medium-high heat just until lightly browned and grill-marked on both sides. When cool enough to handle, cut into bite-size pieces and scatter over salad.
  3. Scatter berries and almonds over top. Drizzle with Greek Yogurt Dressing.

Greek Yogurt Dressing: Whisk together 1/4 cup plain low-fat Greek yogurt, 1 teaspoon olive oil, 1 teaspoon white wine vinegar, 2 tablespoons pineapple juice, 1/8 teaspoon ground cinnamon and pinch cayenne pepper. Season with salt and pepper to taste. Makes about 1/3 cup.
