For this Mediterranean salad platter, Roman meets Greek with splendid results. The traditional ingredients of a Greek salad—cucumber, tomato, olives and feta cheese—are mixed with additional crisp vegetables, but then combined with our DOLE® Ultimate Caesar Salad to create a blend that tastes like it was meant to be. Okay, so the Caesar salad is an American invention, but you’re sure to agree anyway that this salad is, without a doubt, a new classic.

Ingredients

  • 1 pkg. DOLE® Ultimate Caesar Salad Kit
  • 1 small seedless or 1/2 English cucumber, thinly sliced
  • 1 red bell pepper, thinly sliced into rings
  • 1/2 cup DOLE Red Onion, thinly sliced
  • 12 grape or cherry tomatoes, halved
  • 12 pitted Kalamata olives
  • 1/4 cup feta cheese, crumbled
  • Freshly ground black pepper

Directions

  1. Combine salad blend in large bowl with provided accompaniments; toss with dressing.
  2. Place salad on large platter with the cucumber, red pepper, onion, tomatoes, and olives arranged on top.
  3. Sprinkle feta cheese and black pepper, to taste.
