Here’s a salad that encapsulates the feelings and flavors of fall. It has the dual charm of being elegant enough for a lovely dinner for two and yet can be made, if you like, with holiday-meal leftovers. It starts with our luxurious combination of tender baby spinach, dried cherries and crumbles of blue cheese tossed in our White Balsamic Vinaigrette, and is then turned into a satisfying light meal when topped with cooked turkey or chicken and sweet, velvety cubes of cooked squash.

Ingredients

  • 1 pkg. DOLE® Spinach Cherry Almond Bleu Kit
  • 1 cup cooked, peeled butternut squash cut into 1/2-inch cubes
  • 1 cup shredded cooked turkey or chicken
  • 1 ripe DOLE Pear, cut in half lengthwise, cored and thinly sliced crosswise

Directions

  1. Pour small amount of White Balsamic Vinaigrette from salad kit over cooked butternut squash in small bowl; stir to coat squash.
  2. Combine all ingredients in salad kit except dressing in large bowl. Add turkey, pear slices and squash mixture. Toss with remaining vinaigrette. Divide salad on 2 large plates.
