In spite of their diminutive name, shrimp have a giant place in the culinary world. They’ve come way down in price over the years, yet they still have a luxury quality about them, plus they’re super quick-cooking and extremely low in fat. This trifecta of culinary kudos makes them a welcome topper for any salad, especially one as flavorful yet easy to prepare as this Endless Summer Salad with Shrimp. In this instance, the tasty crustaceans are simply sautéed with fresh ginger and lemon juice, and spooned on top of a summery salad of romaine, carrots and cabbage, then tossed with a blend of Swiss cheeses and studded with sunflower kernels, our Summer Vinaigrette and, for good measure, some crispy crumbled bacon.

Ingredients

  • 1 pkg. DOLE® Endless Summer™ Salad Kit
  • 4 slices bacon cooked, drained on paper towel and crumbled
  • 1 firm ripe DOLE Pear, seeded and cut into 1/2-inch cubes
  • 1/4 cup sweet onion, cut into thin crescents
  • 1 tablespoon canola oil
  • 2 teaspoons finely chopped fresh ginger
  • 3/4 pound shrimp peeled and deveined
  • 1 tablespoon fresh lemon juice

Directions

  1. Combine all ingredients in salad kit except for Summer Vinaigrette in large bowl with bacon, pear and onion.
  2. Heat oil in medium skillet over moderate heat. Add ginger and cook 1 minute. Add shrimp and cook 3 to 4 minutes or until pink. Remove from heat, cool 5 minutes.
  3. Toss salad with dressing and serve on platter. Spoon shrimp and juices onto center of salad.
