As the catchphrase goes, this is not your mother’s tomato soup. First of all, it doesn’t come out of a can, but quite frankly, it doesn’t take much more time to make than if it did. But more to the point, this isn’t the typical creamy version but rather a light brothy soup packed with chunks of potatoes, tomatoes, onion and flavorful mixed greens. Each bowl is finished with some grated Parmesan cheese, resulting in a feast of flavors that even a mother (who didn’t make it herself) could love.

Ingredients

  • 1 large DOLE® Onion, chopped
  • 4 garlic cloves, minced
  • 2 tablespoons extra-virgin olive oil
  • 2 quarts lower sodium chicken broth
  • 3 pounds DOLE Russet Potatoes, peeled, cut into 1/2-inch cubes
  • 1 pkg. (5 oz.) DOLE Sweet Baby Lettuces
  • 1 can (14 to 15 oz.) crushed tomatoes, undrained
  • Salt and ground black pepper, to taste
  • 1/2 cup grated Parmesan cheese

Directions

  1. Cook onion and garlic in olive oil in 6-quart sauce pot over medium-high heat, stirring, frequently, 5 to 6 minutes or until vegetables are softened. Add broth; bring to boil.
  2. Add potatoes; bring back to boil, stirring occasionally. Reduce heat; simmer, uncovered, 20 to 25 minutes or until potatoes are very soft. Add salad blend; cook, stirring, until wilted. Stir in tomatoes, salt and pepper, to taste; cook until heated through. Sprinkled each serving with Parmesan cheese.
