Ingredients

  • 1 cup DOLE® Cauliflower, grated into cauliflower rice
  • 1 cup shredded zucchini
  • 1 cup mashed chickpeas
  • 1 cup frozen corn, thawed
  • 2 eggs
  • 1 cup almond meal
  • 2 tablespoons chopped fresh cilantro
  • 1 teaspoon curry powder
  • 1 teaspoon ground cumin
  • ½ teaspoon lemon pepper
  • ¾ cup fat-free plain Greek yogurt
  • 1 tablespoon Sriracha sauce
  • 1 pkg. (11.1 oz.) DOLE® Mango Sriracha Slawesome Kit

Directions

  1. Preheat oven to 400°F. Lightly coat baking sheet with cooking spray.
  2. Combine cauliflower, zucchini, chickpeas, corn, eggs, almond meal, cilantro, curry powder, cumin, and pepper in large bowl until mixed.
  3. Form into 12 patties. Place on prepared baking sheet.
  4. Bake 10 minutes, remove baking sheet and turn patties over, continue baking 10 more minutes or until lightly browned.
  5. Stir together yogurt and Sriracha until blended. Prepare DOLE® Mango Sriracha Slawesome Kit.
  6. Serve fritters with salad and Sriracha dipping sauce.

    Air-Fryer Method — Preheat air fryer to 390°F. Coat the patties with cooking spray. Place the patties in a single layer in the air fryer basket, making sure they do not overlap or touch. Air-fry 12 minutes, flipping the patties after 6 minutes. Repeat with remaining patties.
