Ingredients

  • 3 ripe DOLE® Bananas, mashed
  • 2 eggs
  • ⅓ cup applesauce or vegetable oil
  • 1 cup pumpkin puree
  • ½ cup honey
  • ½ cup maple syrup
  • 2-½ cups whole-wheat flour
  • 2 teaspoons pumpkin pie spice
  • 1 teaspoon baking powder

Directions

  1. Preheat oven to 350°F. Lightly coat with cooking spray or grease 9x5-inch loaf pan.
  2. Stir together mashed bananas, eggs, applesauce, pumpkin, honey, and maple syrup, in large bowl until blended.
  3. Sift flour, pumpkin spice, cinnamon, and baking powder and stir into banana mixture until just combined. Spoon into prepared pan.
  4. Bake 1 hour to 1 hour, 15 minutes, or until toothpick inserted into center of loaf comes out clean.
  5. Cool in pan 10 minutes. Remove from pan onto wire rack; cool completely.
