A chicken with Caesar salad is a perfect match, but let’s face it: it can get pretty boring when it’s always a boneless, skinless breast. But don’t ditch this classic combo just yet. A bone-in breast (the most flavorful way to enjoy white meat), with an intensely flavored paste of basil pesto and sun-dried tomatoes nestled under the skin, baked until crispy and golden—that’s a feast, especially when served alongside our DOLE® Caesar Salad. Ingredients

  • 6 chicken breasts halves with skin and bone
  • 3 tablespoons bottled pesto
  • 3 tablespoons marinated sun-dried tomato slices
  • 2 small lemons, seeded, cut into 1/4-inch slices
  • Garlic salt, as needed
  • 1 pkg. DOLE® Caesar Salad Kit

Directions

  1. Preheat oven to 375°F.
  2. Line baking sheet with foil and spray with nonstick cooking spray. For each chicken, lift skin and rub 2 teaspoons pesto onto each breast. Top with 2 teaspoons tomatoes and 2 lemon slices; cover with skin. Sprinkle chicken with garlic salt to taste.
  3. Bake 30 to 35 minutes or until golden brown and juices run clear.
  4. Serve with DOLE® Caesar Salad Kit.
