Ingredients

  • 4 cups unsweetened original almond milk 
  • 1 onion, peeled and chopped 
  • 4 sprigs fresh thyme 
  • 5 cups fresh breadcrumbs 
  • 3 DOLE® Bananas, peeled and divided 
  • 1/2 teaspoon black pepper 
  • 1/2 teaspoon salt 
  • 2 teaspoons maple syrup 
  • ¼ cup chopped pecans

Directions

  1. Combine milk, onion, and thyme into a saucepan, and bring to a boil. Reduce heat to low and simmer for 15 minutes.
  2. Remove from heat and strain. Return strained liquid to saucepan. Discard solids.
  3. Mash 2 bananas and set aside.
  4. Add breadcrumbs to milk mixture and simmer for 5 minutes, until the breadcrumbs have absorbed most of the liquid. Stir in the mashed banana and season to taste with salt and pepper. Transfer mixture into 8”x 8” baking dish.
  5. Dice remaining banana reserving some sliced banana for top. Combine diced banana, maple syrup, and pecans in bowl. Stir to coat.
  6. Top bread mixture with diced banana and pecan mixture and reserved sliced banana. Broil on high for 2 minutes.
