Recipe featured at Tortilla Jo's Restaurant at Downtown Disney, California. Mexican shrimp marinated in lime juice with red onions, tomatoes, cilantro, and dole pineapple. Served with avocado, lime Tapatio salsa and corn tortilla chips.

Ingredients 10


2 pounds shrimp, peeled and deveined
4 cups lime juice
4 cups DOLE® Chef-Ready Cuts Pineapple Cubes, partially thawed
DOLE Red Onion, diced
2 cups roma tomatoes, diced
jalapeno chiles, diced
cucumbers, diced
3 tablespoons fresh mint, chopped
3 tablespoons fresh cilantro, chopped
  salt and pepper, to taste



2 pounds shrimp, cleaned


In a mixing bowl, add shrimp and lime juice.  Let shrimp marinate for 2 hours.


4 cups DOLE Fresh Pineapple, diced

1 red onion, diced
6 jalapeno chiles, diced
2 cucumbers, diced
3 tablespoons chopped fresh mint
1 cup chopped fresh cilantro
Salt and pepper, to taste


Combine pineapple, onion, tomatoes, jalapeno, cucumber, mint and cilantro in large mixing bowl.  When shrimp is finished marinating mix into the vegetables. Season with salt and pepper to taste. Serve with Tapatio and chips.
