Festive Wrap A delicious and simple wrap; great for lunch.
1 can (15 oz) black beans, rinsed and drained,
1 can (7 to 8 /3/4 oz.) whole kernel corn,
2 cups cooked chicken, shredded,
1/2 cup salsa,
1/2 cup light sour cream,
2 tbsp low-fat milk,
8 low fat wraps or flour tortilla (10 in diameter),
1 avocado, halved, pitted, and peeled, cut in 1/8ths,
1 pkg (12 oz) DOLE® American Salad Blend,
1 tbsp fresh lime juice,
Step 1: Combine beans, corn, chicken, and salsa in medium bowl. Stir together sour cream, milk, and lime juice in small bowl.
Step 2: Warm each wrap in an ungreased skillet over medium heat until soft and pliable, 15 seconds each side.
Step 3: Divide bean mixture between 8 wraps, spreading across the center of the wrap. Top each with 2 slices avocado and equal amounts of salad blend. Drizzle with sour cream mixture. Fold wraps as you would a burrito tucking in the ends first, and then rolling.
