Crab Papaya and Walnut Salad This is a great summer salad with crab, papaya and the crunch from walnuts.
1-1/2 cups (6 oz.) crab dungeness, king or snow crab meat,
1 cup red or green bell pepper, chopped,
1/3 cup toasted walnuts,
1/4 cup DOLE® Green Onions, sliced,
1/4 cup plain yogurt,
1/4 cup light mayonnaise,
1/8 teaspoon paprika,
1 pkg (10 oz.) DOLE European Blend,
1 DOLE Papaya, seeded, skinned and sliced,
Step 1: Toss together crab, bell pepper, walnuts and onions in bowl.
Step 2: Stir together yogurt, mayonnaise and paprika, in small bowl. Season to taste with salt and pepper, if desired. Stir into crab mixture. Line two plates with salad blend. Arrange one-half papaya slices over each salad. Evenly divide crab salad mixture over papaya on each plate.
Step 3: Serve, or cover and chill up to 2 hours before serving. Garnish with red bell pepper strips, if desired.
