Crab Papaya and Walnut Salad

This is a great summer salad with crab, papaya and the crunch from walnuts.

Ingredients 9


1-1/2 cups (6 oz.) crab dungeness, king or snow crab meat
1 cup red or green bell pepper, chopped
1/3 cup toasted walnuts
1/4 cup DOLE® Green Onions, sliced
1/4 cup plain yogurt
1/4 cup light mayonnaise
1/8 teaspoon paprika
1 pkg (10 oz.) DOLE European Blend
DOLE Papaya, seeded, skinned and sliced



1-1/2 cups (6 ounces) crab dungeness, king or snow crab meat, thawed if necessary
1 cup chopped red, yellow or green bell pepper
1/3 cup toasted walnuts
1/4 cup sliced DOLE Green Onions


Toss together crab, bell pepper, walnuts and onions in bowl.


1/4 cup plain yogurt
1/4 cup light mayonnaise
1/8 teaspoon paprika
1 package 10 oz.)  DOLE European Salad Blends
1 DOLE Papaya, peeled, seeded, and sliced


Stir together yogurt, mayonnaise and paprika, in small bowl.  Season to taste with salt and pepper, if desired.  Stir into crab mixture. Line two plates with salad blend.  Arrange one-half papaya slices over each salad.  Evenly divide crab salad mixture over papaya on each plate.



Serve, or cover and chill up to 2 hours before serving. Garnish with red bell pepper strips, if desired.
