Chicken Walnut and Bacon Salad A chicken salad with walnuts and bacon.
1 container (5 oz.) DOLE® Sassy Baby Blend,
1 cup shredded Cheddar cheese,
1 large heirloom tomato, chopped,
6 oz. cooked chicken, cut into strips,
1 ripe pear, cored and sliced,
2 oz. bacon slices, cooked and crumbled,
2 tbsp. glazed walnuts,
Dill Yogurt Dressing (recipe below),
Divide salad onto two plates. Top with cheese, tomato, chicken, pear slices, and crumbled bacon. Toss with Dill Yogurt Dressing to taste. Top with glazed walnuts. Refrigerate any remaining dressing.
Dill Yogurt Dressing: Whisk together, 2/3 cup plain yogurt, 1/3 cup light mayonnaise, 3 tablespoons white wine vinegar, 2 tablespoons chopped fresh dill, 1 tablespoon milk, 1 tablespoon grated lemon peel, 1 garlic clove finely chopped, salt and pepper to taste until blended. Makes about 1 cup.
