Cheesy Potato Skins Potato skins homemade with Parmesan cheese
4 large DOLE® Russet Potato(s),cut into 1/2-inch wedges,
1 tablespoon olive oil,
1/2 teaspoon paprika,
1/4 teaspoon salt,
1/8 teaspoon ground red pepper,
2 to 3 tablespoons Parmesan cheese, grated,
Step 1: Preheat oven to 400 degrees F.
Step 2: Remove skin and about 1/8 inch of potato with paring knife in long lengthwise strips 1 to 2 inches wide. Place potato strips in large bowl.
Step 3: Drizzle with olive oil; toss well. Sprinkle with paprika, salt and red pepper; toss well to coat and evenly with seasonings.
Step 4: Arrange potato strips in single layer in large nonstick rimmed baking sheet, sprayed with nonstick cooking oil spray. Sprinkle with Parmesan cheese. Bake 25 to 30 minutes, turning once, or until crispy and golden brown.
