Bleu Mac n Cheese A twist on the class mac 'n' cheese.
1 pkg. (13 oz.) dry penne pasta,
1 tbsp. olive oil,
3 shallot(s), sliced into thin rings,
1/4 cup + 2 tbsp. butter, divided,
1 cup Panko bread crumbs,
2 tbsp. all-purpose flour,
2 cups milk, heated,
1/2 tsp. white pepper,
2 cups (8 oz.) crumbled bleu cheese, divided,
Step 1: Preheat oven to 350 F.
Step 2: Cook pasta according to package directions, until firm.
Step 3: Heat oil in medium skillet over medium heat. Add shallot, saute, stirring occasionally for 10 minutes or until caramelized.
Step 4: Melt 2 tablespoons butter in small skillet over medium heat. Add Panko crumbs and cook stirring until golden brown. Melt remaining 1/4 cup butter in large skillet. Whisk in flour until smooth. Add milk and pepper slowly whisking to make smooth sauce. Stir in 1-1/2 cups bleu cheese and shallots. Add pasta; stir to coat.
Step 5: Spray 13x9-inch baking dish with nonstick cooking spray. Pour pasta mixture into dish. Sprinkle with remaining 1/2 cup bleu cheese and browned panko crumbs. Bake 20 minutes or until hot.
Step 6: Serve with DOLE All Natural Light Caesar Salad Kit.
