A quick and healthy antipasto great for kids and adults alike.

Ingredients 13

Ingredients

1-1/2 tbsp balsamic vinegar
3 tbsp olive oil
2 tsp parsley, chopped
1/2 tsp grated lemon peel
  salt and pepper
1 cup DOLE® Broccoli florets, lightly steamed
1 cup DOLE Mini Cut Carrots
bell pepper, cut into strips
strawberry tomatoes
black ripe pitted olives
8 slices lite salami
4 slices provolone, or other mild cheese
  assorted crackers

Steps

STEP1
Ingredients

1-1/2 tbsp balsamic vinegar
3 tbsp olive oil
2 tsp chopped fresh parsley
1/2 tsp grated lemon peel
Salt and pepper

Direction

Whisk vinegar and oil in small bowl; add parsley and lemon peel. Season to taste with salt and pepper.

STEP2
Ingredients

1 cup DOLE Broccoli Florets, lightly steamed
1 cup DOLE Mini Cut Carrots
1 bell pepper, cut into strips
8 strawberry tomatoes
8 black ripe pitted olives
8 slices lite salami
4 slices provolone or other mild cheese

Direction

Arrange vegetables on platter with dipping sauce and olives. Lay two slices salami onto each slice cheese; roll and secure with toothpick cut in half. Tuck next to the vegetables.

STEP3
Ingredients

Assorted crackers or bread sticks

Direction

Serve with assorted crackers and/or breadsticks.

Tip: Ranch dressing may be substituted for the vinaigrette dressing.
