Almond Ginger Ice Cream Pie No one can resist this decadent ice cream pie.
1 can (20 oz.) DOLE® Crushed Pineapple,
1 quart vanilla ice cream, softened,
1/2 cup slivered almonds, toasted,
1/4 cup crystallized ginger, chopped,
3 tbsp. almond flavored liqueur,
1-1/2 cups vanilla wafer crumbs,
2/3 cup ground almonds, toasted,
1/4 cup margarine, melted,
Step 1: Drain 1/2 cup juice from pineapple. (Use juice as a beverage.)
Step 2: Mix remaining undrained pineapple with ice cream, almonds, ginger, liqueur and 1 tablespoon orange zest. If too soft, freeze 1 hour.
Step 3: Combine all crust ingredients. Press in 9-inch pie plate. Turn filling into crust. Freeze 6 hours or overnight. Let soften slightly before slicing.
