A healthy and tasty veggie soup.

Ingredients 13


1 tsp. vegetable oil
1/2 cup white DOLE® Onion, chopped
garlic clove(s), chopped
1 can (14.5 oz.) reduced sodium, fat-free chicken broth
2 cups water
1 can (28 oz.) crushed tomatoes
1/2 cup alphabet pasta
1/2 cup DOLE Parsley Leaves
1 cup DOLE Broccoli chopped
1 cup DOLE Carrot(s), chopped
1 cup DOLE Celery, chopped
  salt and ground black pepper, to taste
2 tbsp. (optional) Parmesan cheese, grated



1 tsp. vegetable oil
1/2 cup chopped white DOLE Onion
1 clove garlic, peeled and chopped


Heat oil in a saucepan over medium heat. Add onion and garlic and cook until the onion is soft, about 2 minutes. Stir occasionally.


1 can (14.5 oz.) fat free, reduced sodium chicken broth
1 can (28 oz.) crushed tomatoes
1/2 cup alphabet pasta
1/2 cup DOLE Parsley Leaves


Add chicken broth, tomatoes, pasta and parsley to the saucepan. Bring the liquid to a boil, reduce heat, and simmer for 10 minutes.


1 cup chopped DOLE Broccoli
1 cup chopped DOLE Carrots
1 cup chopped DOLE Celery
Salt & pepper to taste
2 tbsp. grated Parmesan cheese, optional topping


Add broccoli, carrots and celery to soup; cook 10 minutes. Add salt and pepper to taste.



With help from an adult, ladle the soup into six bowls. Sprinkle each bowl with a teaspoon of Parmesan cheese.
