A very special pineapple Eskimo.

1 can (20 oz.) DOLE® Crushed Pineapple
1 cup butterscotch sauce
1/2 cup chopped dried apricots
1 cup plain granola
1 quart lowfat frozen vanilla yogurt

Steps

STEP1
Ingredients

1 can (20 oz.) DOLE Crushed Pineapple
1 cup butterscotch sauce
1/2 cup chopped, dried apricots

Direction

Drain pineapple, save juice for beverage. Combine pineapple, butterscotch sauce and apricots.

STEP2
Ingredients

1 cup plain granola
1 quart lowfat frozen vanilla yogurt

Direction

Light coat 9-inch pie place with nonstick spray.  Sprinkle bottom with 1/4 cup granola.  Layer 1/3 frozen yogurt over granola.  Spoon 1/3 pineapple sauce over frozen yogurt.  Repeat layering twice, ending with granola.
