BANANA CHIA PANCAKES

INGREDIENTS

  • 2 cups whole wheat flour
  • 2 tablespoons DOLE® Nutrition Plus Milled Chia Seeds
  • 2 teaspoons baking powder
  • 1-1/2 teaspoons ground cinnamon
  • 1/4 teaspoon salt
  • 1-3/4 cups low-fat milk
  • 2 eggs
  • 1 tablespoon honey
  • 1 ripe DOLE® Banana, small diced

DIRECTIONS

COMBINE flour, chia seeds, baking powder, cinnamon and salt in large bowl; set aside.

MIX together milk, eggs and honey in small bowl. Pour wet ingredients into dry; add diced banana. Fold until just mixed.

HEAT large non-stick skillet over medium-high heat. Pour about 1/4 cup batter for each pancake, and cook until edges are bubbly and look dry, about 2 minutes. Turn and cook other side until golden brown.

GARNISH with sliced strawberries and bananas, if desired.
